Good news! There are LOTS of healthy (low or no fat, high in fiber), affordable, humane alternatives available!
Most of these products are easily available at local food stores, and lower in price.
- Silken tofu (1/4 cup, blend or smash before adding. Works best in dense baked goods
- like brownies, muffins, and cookies).
- Ground flax (probably the most popular and one of the easiest alternatives is to just mix 1 Tbsp of ground flaxseeds with 3 Tbsp water and let it sit for 10-15 minutes to thicken. This alternative is high in fiber and Omega-3 fatty acids for boosting heart health)
- Applesauce (1/4 cup per egg needed in baking recipes)
- Mashed Ripe Banana (1/4 cup per egg needed in baking recipes)
- Aquafaba (fancy name for the liquid found in a can of garbanzo beans, and it works
- great! Use 3 Tbsp of liquid per egg needed, and whip/whisk prior to adding into recipes.
- Can even be used as a substitute for delicate meringues!)
- Pumpkin Puree (approx ¼ cup per egg needed in baking recipes)
- Commercially prepared egg substitute (like Bob’s Red Mill brand Egg Replacer, which is approximately five dollars for the equivalent of 34 eggs. It is a combination of potato starch, tapioca flour, baking soda and psyllium husk. Zero fat and zero cholesterol.)

Although there are commercially produced egg alternatives available at most grocery stores, just as JustEgg or Simply egg (usually found in the refrigerated or frozen food sections), making a tofu scramble can be a highly nutritious, more affordable, simple switch. All of these ingredients are available at Aldi, Meijer, WalMart and local Spartan stores like Family Fare:
Southwest Tofu Scramble
Ingredients (yields 4 servings)
16 ounces extra-firm tofu, drained
1 red bell pepper, thinly sliced
½ cup thinly sliced red onion
4 cups chopped kale
½ cup salsa
Sauce:
2 tablespoons water
1 teaspoon garlic powder
1 teaspoon ground cumin
